They are then pulped mechanically, then fermented dry for 24 to 36 hours, before being spread out on the patio for 7 to 10 days for slow and even drying. The sale of cascara thus constitutes an opportunity for producers to earn additional income.\u0026nbsp;\u003c\/span\u003e\u003c\/p\u003e\n\n\u003cp data-mce-fragment=\"1\"\u003eThe word cascara, which means \u0026ldquo;skin\u0026rdquo; or \u0026ldquo;peel\u0026rdquo; in Spanish, refers to the pulp of the coffee cherry. This surrounds the coffee bean, nourishing it with organic elements throughout its development, until it matures. Once harvested, the coffee cherries are pulped to separate the bean from the pulp. Cascara is thus produced en masse during each coffee harvest, and is only very rarely upgraded since it is usually composted and used as a natural fertilizer. However, once dried and infused, cascara offers a delicious, fruity, low-caffeine liquor.\u0026nbsp;\u003c\/p\u003e\n\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eInfuse preferably in a teapot or a French press, using a ratio of 5g of Cascara to 220ml of water at 95C. Indeed, we have supported the initiative of Azahar Coffee in the community of El Naranjo since our beginnings as roasters, in 2018. Due to its strong social and cultural impact, the project behind this coffee is obvious to us\u0026nbsp;and we wanted to come back to it, year after year.\u0026nbsp;\u003c\/span\u003e\u003c\/p\u003e\n\n\u003cp\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003eThis coffee comes from the municipality of Yacuanquer, in the department of Nari\u0026ntilde;o in southern Colombia. The Nari\u0026ntilde;o region, bordered on one side by the Pacific Ocean and on the other by the Andes, is renowned for its exceptional coffees, grown for several generations on volcanic soil, very rich in minerals. It is there that Azahar Coffee, a coffee export company particularly invested in supporting producers, decided to launch its program. \u003c\/span\u003e\u003ci\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003eCollectors Project\u003c\/span\u003e\u003c\/i\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003e, in 2018. This program, which means \u0026ldquo;Pickers Project\u0026rdquo; in Spanish, aims to promote and consolidate the know-how of coffee pickers. This profession, which is not often honoured, is nevertheless a key element in the coffee production chain. Indeed, the know-how and dedication of the pickers are essential in the success of each harvest. The precision and knowledge required to harvest only the ripe cherries on the coffee trees are decisive in ensuring a production of superior quality, thus guaranteeing a higher purchase price and better incomes for producers.Unfortunately, a constant financial and social devaluation of this trade pushes back the younger generations, preventing the transmission of know-how. Intense training and learning program\u0026nbsp;associated with a remuneration reaching double the local standards, the company Azahar Coffee, through the \u003c\/span\u003e\u003ci\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003eCollectors Project,\u003c\/span\u003e\u003c\/i\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003e intends to reverse the situation and revalue this profession. Moreover, this project is an immense source of pride and unity for the entire community of El Naranjo, and we can only be proud and humble to be able to participate in it for several years now.\u0026nbsp;\u0026nbsp;\u003c\/span\u003e\u003c\/p\u003e\n\n\u003cp\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003eProducers who participated in the program \u003c\/span\u003e\u003ci\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003eCollectors Project \u003c\/span\u003e\u003c\/i\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003ein 2020 are Don Macario Paz, Nelson Chaves Burbano, Ancizar Santacruz Lasso, Jos\u0026eacute; Luis Tejada Nandar, Jos\u0026eacute; Emilio Burbano Yaluzan, Luis Artemio Daza Andrade, Luis Estrada Carlosama, Do\u0026ntilde;a Lilia del Socorro Diaz and Carlos Alfredo Burbano Chavez.\u003c\/span\u003e\u003c\/p\u003e\n\n\u003cp\u003e\u003cspan data-mce-style=\"font-weight: 400;\" style=\"font-weight: 400;\"\u003eGrown at an altitude of 1900 meters, this coffee is made from the Caturra and Castillo varieties. It is picked when fully ripe and sorted by flotation first, then by hand, in order to remove the cherries that are too ripe or not ripe enough. It is then mechanically depulped then passed under a stream of water to remove the remaining mucilage, before being dry-fermented for 18 to 30 hours. Finally, it is stretched out on raised beds for 18 days for slow, even drying.
